tasting two grades of jin jun mei side by side really shows how much leaf quality matters 🍂

the top jin jun mei shows fewer golden hairs and more broken, darker material. that usually means fewer spring buds and more mature leaf or harder firing. in the cup, this results in a flatter sweetness, heavier cocoa notes, and a quicker slide into dryness or bitterness if oversteeped (which i did 😭).

the bottom jin jun mei though: *chef’s kiss* 😘 you can see the difference immediately, with whole, slender buds covered in fine golden down (called ‘hao’), a sign of early spring harvest and careful processing.

these hairs are not just cosmetic - they are where a lot of jin jun mei’s signature honeyed sweetness comes from. brewed gently, this one gives layered notes of honey, soft malt, dried fruit, and a lingering sweetness that returns after each sip. so freaking good!

same tea name. same region. completely different experience 😌

this is why jin jun mei is less about darkness or strength and more about clarity, sweetness, and finesse, and why short steeps and good leaf really matter.

hi all! if you have been following for a while, you probably already know that i, amy aed (aka @wandering_everywhere ), run eisa tea co., a small wales-based business which aims to change the whole tea industry (a big dream, i know) 👩🏻‍🌾

i started this business as i began to notice that the majority of teas in the uk were either picked by farmers receiving horrible treatment and horrifically low wages, or grown with pesticides and chemicals, and served in teabags made of plastic (yes, even those “plastic-free” teas… i can talk for hours about those!).

currently, i am on a tea sourcing and studying trip in taiwan, where i am able to live with tea farmers and study mandarin to better my communication, and i spend almost all of my time in tearooms learning about the leaves from masters, pickers, enjoyers, and everyone in between 🍵

i write this from one of my favourite local tearooms in taoyuan, where i take almost everyone that visits me here. as another fun fact, i have spent a surprising amount of my time in taiwan rescuing animals both big and small - and this tearoom has seen me bring in all!

i met salah at the hostel he runs in marrakech. he was only 23 and already shaped by movement: taghazout → UAE → back again, through fighting, hospitality, and reinvention. he drinks his tea without sugar (almost sacrilegious here), and was such an open book 😌

we talked for hours about discipline, grief, and travel. he was already late to another meeting, but chose to stay. when i pointed it out, he just smiled and said, “i have all the time.”

i left with stories, warmth, and a small reminder of how easily connection can happen over a cup of tea 🤍
